Didko! “Didko” is a lesser demon of Ukranian mythology, but he is not evil, but a witty and cunning trickster. He can make a joke of you, or urge you to do something you’d never dare to take on alone. Our beer is kinda weird, and the flavors are unconventional. It all started as a homebrewing project with about 10 beers, presented at the Kyiv beer festival. Encouraged by the positive feedback, we proceeded to contract brewing and the recreation of home-invented recipes on a bigger scale, brewed collabs with Ukranian and European breweries. Two years ago, we managed to build our own small facility, install equipment, and start a full-fledged brewery, but now we are looking for a new start in the Netherlands, with a small but very craft brewery in s’-Heerenberg.
The Beer
We brew varied styles and kinds of beer and have brewed over 170 of them. We do familiar hoppy IPA’s, classical Stouts, Doppelbocks, Pils even. But more often than not, we ask ourselves, what can we do to surprise and awe people, what kind of unusual ingredients can we incorporate into beer?
Didko knows smoky beer well. We did more than 10 varieties full of smoky, peated, roasty, and Islay Whiskey flavors. Tomato beer has a special place in our hearts. We brewed tomato Gose with a huge selection of additional ingredients such as pepper, beetroot, onion, celery, dill, and others, and all of them were loved and appreciated, so we are not going to stop experimenting with it. We love quirky beers: strong strawberry Gose, Stouts with Tabasco, herbal IPA with cardamom and spices, rye IPA of 115IBUs, beer with pomegranates, cherry, dried mango, kiwi, nuts, olives, anise, you name it. Barrel aging is also something we love and do.
